“Recently I was part of a wine and food presentation in Dunedin, I had the opportunity to source food producs from that bountiful region. Seeking advice on local specialities from Michael Coughlin, owner of the city restaurant Bell Pepper Blues and executive chef at Pier 24 Beach House at St Clair, he suggested that I contact Sue and Gus Morton from Waitaki Bacon and Ham, 15 minutes north of Oamaru.

So one of my dishes, among a range of locally grown fat asparagu, freshly caught sole, Karitane crayfish, Evansdale cheese and farmed Stewart Island oysters was pork belly. I simmeredit, marinated it in spices, roasted it and served it with a beetroot and tarragon salad, and it was relished with a range of Felton Road Pinot Noirs.

Sue's friendly and professional phone manner and her follow up regarding delivery gave me the assurance that the pork belly I was going to receive would be flavoursome and tender. I felt I had no need to question where the pigs were housed or what they were fed. Sue and Gus, like most New Zealand pig farmers - and farmers generally - respect their animals and aim to do the best job possible for the stock and the resulting product.

It would be rich of me to suggest that the pork recipe today is best made with free-range and/or organic pork, as your purse may not run to this. However, for the sake of farmers such as Sue and Gus, and the continuation of pig farming in New Zealand, at least buy New Zealand pork. It is clearly labelled and it is easy for you to speak to the farm it comes from

Compared to other salamis we have purchased we found this one easier to slice, "softer" and with a subtle flavour which is very pleasant to eat on its own, with accompaniments or in a sandwich. And the casing is very easy to remove.

We would have no hesitation in recommending your product to anyone else.
